Our passion

Passion and a connection to nature often go hand in hand, forming a powerful bond. Here in Upper Swabia, in the beautiful Illertal valley, crisscrossed by the clear mountain river Iller, which provides a habitat for people, animals, and plants, our passion was born.

Inspired by this pristine nature, our passion emerged to capture the flavors and scents of grains and fruits in distillates – for the well-being of humanity.

2011

The first big step

By purchasing an old farm in Kirchberg, we took the first big step towards building our distillery. The building, which is over 100 years old, was extensively renovated and brought up to the latest technical standards. Today, visitors can experience the distillation process up close and become part of this special atmosphere.

Commissioning

2016

First young distillates

The commissioning of Distillery No ONE was a significant moment full of pride and joy. The technical systems were started up for the first time after all permits had been granted.

The prepared mash was distilled into fine spirits in a two-stage process, while wort made from the finest barley malt was processed into raw whiskey. The crowning achievement: the bottling of the first bottles – a milestone and the beginning of an exciting journey.

Filling the first barrels

When the raw whiskey was poured into hand-picked oak barrels from Bordeaux, the seductive scent of mature wine aromas unfolded – a sensual experience. The whiskey, at around 62% ABV, shimmered silver as it poured into the oak barrel.

The aging process began and the whiskey flavors reacted with the wood, releasing vanilla, caramel and spice notes. This phase particularly shapes the unique character of the whisky.

Opening of the distillery

The ceremonial opening of the distillery took place in autumn 2017. The official inauguration of the restored farm and the modernized facilities was celebrated by numerous visitors.
Guests were able to taste and purchase the first brandies and spirits, ask questions about the craft of distillation and enjoy the warm atmosphere.

Awards and milestones

2024 marked another important milestone: Our whiskey classic DIS ONE b.m.d. won gold at the Women’s International Award, which confirmed the high quality and fine aroma. Our whiskey Kerub DIS ONE b.m.d. received gold at the Meininger’s International Spirits Awards – further proof of our passion and our pursuit of perfection.
