Since 2017, the DIS ONE® Distillery has consistently pursued the goal of producing single malt whiskeys in single cask first fill quality for connoisseurs. Our brandies, spirits and liqueurs are based exclusively on natural raw materials and reflect the purity and quality of the ingredients.

We attach great importance to the careful processing of high-quality raw materials. Wort and mash are distilled in a two-stage, climate-neutral process to ensure the highest quality. An exciting variety of scents and flavors of our limited single cask whiskeys is guaranteed by hand-picked oak barrels that were previously filled with fine Bordeaux wines.

We call the result of this care “boost maturity distilled” – b.m.d.®,
which stands for excellent maturation and exceptional quality.

Barrel aging

The key to character building

DThe fresh whiskey from DIS ONE ® is filled into Bordeaux barrique barrels at around 60% vol., which significantly shape the distillate through active interaction.

Oxygen penetrates through the wood pores while the whiskey absorbs aromatics such as vanilla, caramel and wood tannins. These aromas complement base notes such as fruity tones of green apple and citrus and malty sweetness. Depending on the roasting method of the malt and the distillation process, there are floral, grainy or smoky nuances, complemented by spicy and herbal facets.

Barrel quality, maturation time and storage conditions determine the unique character of DIS ONE® whiskey in terms of taste, color and texture.

Bottle aging

The perfection of taste

Before bottling, the brandy is diluted to drinking strength with soft, mineral-rich well water. This process promotes the release of subtle aromas that were previously hidden in the spirit. When bottling, special care is taken to avoid oxidation in order to best preserve the aromas.

After bottling, the bottle aging phase begins in a dark, protected environment. During this time of harmonization, the full potential of the fruit in the brandy unfolds. The interaction of scent and aroma is harmoniously rounded off by the well water, resulting in a balanced and intense taste experience. Every drop becomes a true culinary experience.

The precise beginning of whiskey production

The malted barley is first gently ground into grist and then mixed with hot water in a mash tun. This process requires precise control of temperature and duration to create optimal conditions for the conversion of starch into sugar. The enzymes contained in the malt are activated, converting the starch into fermentable sugars.

The next step is to add yeast to initiate fermentation. During this phase, the sugars in the wort are converted into alcohol and carbon dioxide. The entire process of mash and wort production and subsequent fermentation requires precise control and technical know-how to achieve the desired alcohol and aroma components.

Precision in every step

At DIS ONE, the wort and mash are distilled immediately after fermentation in a two-stage process. The first distillation process, the so-called rough edge, concentrates the alcohol content of the mash to around 36% by volume. In the second distillation process, the fine distillation, a particularly gentle distillation takes place, which creates an alcohol-water mixture of approx. 84% by volume.

Crucial to the quality of the end product is precise fragmentation of the waste, precise filtering of the alcohol vapor and a constant distillation speed. These technological subtleties ensure that only the highest quality flavors and ingredients go into the final whiskey.
